As for me …
My big “acorn” project that started as a small idea and turned into something big, was the year I decided to can and jar all the fruits and vegetables in my orchard and gardens – to save them for later rather than eat what was grown and give the rest away.
It started out small, with only a few shelves lined with filled jars in my canning room. But by the end of the growing season, hundreds of jars were lined from top to bottom on every shelf – with every canning recipe imaginable inside … soups and stews; side dishes, canned vegetables and canned fruits; jams and jellies; bags of dried herbs, vegetables, and fruits; dehydrated fruits for snacks; dehydrated meals in mylar bags, and my specialty – Fruit Liqueurs. IT WAS UTERLLY FANTASTIC !!



This “Mighty Oaks From Little Acorns” project of preserving food, was enough to last my husband and I the entire fall, winter, and spring. It was such an accomplishment on my part – one that I was so proud of. Not only did I teach myself how to can and preserve food, but I also knew that if things were to get really bad in this world, I could provide meals for survival if I had to. Goals Made and the best lessons learned !!
