INGREDIENTS
3 large egg whites
3/4 cup granulated sugar
1/2 cup melted butter (unsalted)
1/4 teaspoon vanilla extract
1/4 teaspoon almond extract
3 tbls water
1 cup all-purpose flour, sifted
INSTRUCTIONS
Preheat your oven to 375°F (175°C) and line a baking sheet with parchment paper.
In a bowl, whisk egg whites and sugar until frothy but not stiff.
Add melted butter, vanilla, almond extract and water; whisk until smooth.
Gently fold in the flour until the flour disappears and the batter is combined like airy pancake batter.
Spoon about 1 tablespoon of batter onto the sheet and spread into thin 3-inch circles. Make only 3 cookies at a time as they will set pretty quickly once out of the oven. Bake for 7–8 minutes or until edges turn golden brown.
Quickly remove from the oven (work fast – they harden quickly!). Flip the circles over, put your paper fortune inside cookie, and the fold in half. Take your cookie and bend/crease ends on a coffee mug rim and shape into a fortune cookie shape. Place cookie in a muffin tin to keep its shape while hardening.

Once your cookies have cooled, crack one open – the excitement never gets old!
